Healthy Apple Cinnamon Oatmeal Muffins

This Apple Cinnamon Oatmeal Muffin recipe is from my cookbook “Oven Fresh - 21 Favorite Quick Bread Recipes.” It is absolutely one of my favorite recipes as I find all of the flavors blend so wonderfully together. Today, I’ve tweaked that recipe just a bit by leaving out the processed sugar for those of us that are watching our sugar intake. I can assure you though; these muffins are every bit as scrumptious. I know I find them hard to resist. I used organic coconut palm sugar instead of brown sugar and I truly didn’t notice the difference. In my cookbook, I add a topping of cinnamon, butter, oats, and brown sugar. With this recipe, I only sprinkle a bit of coconut sugar on top before baking. Still so yummy!

Healthy Apple Cinnamon Oatmeal Muffins

Delicious and healthy apple oatmeal cinnamon muffins!

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup old-fashioned oats
  • 1/2 cup coconut palm sugar
  • 1 3/4 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup whole milk or Greek yogurt
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup avocado oil or vegetable oil
  • 3/4 tsp vanilla extract

Instructions

  1. Preheat oven to 400 and prepare a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, oats, coconut sugar, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In a larger bowl, mix together the egg, milk (or yogurt), apple sauce, oil, and vanilla until fully incorporated.
  4. Slowly add in the flour/oat mixture and stir until just combined.
  5. Use an ice cream scoop or large spoon to scoop batter into muffin tins and fill about 3/4 full.
  6. Optional: Sprinkle a little coconut sugar on the tops of the muffins.
  7. Bake for approximately 10 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
  8. Store at room temperature in an air-tight container for up to 3 days or in the fridge for up to 5 days.
