Peanut Butter and Date Chip Cookies

I’ve been testing a lot of recipes lately in order to make cookies without granulated sugar. The two that I’ve been successful with lately is the Oatmeal Walnut Cranberry Cookies and these Peanut Butter and Date Chip cookies that are made with coconut sugar and molasses. Now molasses is a by-product of sugar cane or sugar beets, however, this recipe uses very little molasses - just enough to give the cookies that extra bump in flavor. Also, if you’re a vegetarian, make sure to use the type of molasses that is not made with the sugar that uses bone char. Grandma’s Molasses is made without bone char and that’s what I use.

These cookies have a wonderful flavor and I’m definitely making more of them soon.

Peanut Butter Date Chip Cookies with Coconut Sugar

These peanut butter cookies are so peanut-buttery delicious! Made with coconut sugar and molasses, these cookies are super tasty without being overly sweet.

Ingredients

  • 1/2 cup butter - softened
  • 3/4 cup natural unsweetened peanut butter
  • 1 1/4 cup organic coconut palm sugar
  • 4 Tbsp almond milk (or regular milk)
  • 1 Tbsp molasses (I use Grandma's - see Note below)
  • 1 Tbsp pure vanilla extract
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 1 cup date chips

Instructions

  1. Preheat oven to 375° F.
  2. Line a cookie sheet with parchment paper.
  3. In a small bowl, whisk together flour, salt, and baking soda. Set aside.
  4. In a large bowl, use a stand or hand mixer to mix butter, peanut butter, coconut sugar, milk, molasses, and vanilla on medium speed until smooth and creamy.
  5. Add eggs one at a time and mix thoroughly for about 2 minutes.
  6. Slowly add in the flour mixture and mix at low speed just until the white of the flour has disappeared.
  7. Stir in date chips.
  8. Use a cookie scoop to measure out dough balls and to place them about 2 inches apart. Dough will be soft, but you don't need to pre-chill the dough as it plumps up nicely.
  9. Bake for about 8 minutes. Watch the cookies. Do not overbake.
  10. Cool on wire rack.

Notes

Grandma's Molasses is safe for vegetarians as they do not use sugar made with bone char.
